日本大阪堺市「鄉佑馬允義弘」以 銀紙三號鋼為芯,施以二枚合手工鍛打而成,最終施以手工本霞研磨呈現「地黒刃白」的霞色之感。銀三鋼在硬度、銳利度、耐鏽度皆表現優異, HRC 約 60~62,其鋒利度持久,為不鏽鋼家族之中最銳利的鋼材。

刀刃的根部較厚,而刀尖則薄而鋒利,可以用來將各種魚類、禽類和獸類順利地分解切割。刃長之下的四分之一可用於剁斬敲打食材或斷筋骨,而上六分之一是屬於薄利之處,主要用於開魚、切割剝離食材的各個部位。同時,片刃的設計使得在分解魚肉時,你可以將平面抵住魚骨,用斜面將魚肉與骨分離,這樣的設計讓更少的魚肉殘留在魚骨上。
