In Osaka Sakai City, Japan, "Yoshihiro" crafts this knife using Silver Paper No. 3 Steel as the core, hand-forging it with a double layered construction, and finally applying a Hon-Kasumi finish to achieve the distinctive hazy and misty effect.
Silver #3 Steel excels in hardness, sharpness, and rust resistance, with an HRC of around 60-62. It maintains its sharpness over time, making it one of the sharpest steels in the stainless steel family.
The blade's base is thicker, while the tip is thin and sharp, making it ideal for efficiently filleting and cutting various types of fish, poultry, and meat.
The lower quarter of the blade can be used for chopping and cutting through bones, while the upper sixteenth is thin and sharp, primarily for filleting fish and cutting different parts of ingredients.
Additionally, the single-bevel design allows you to press the flat side against fish bones and use the beveled side to separate the fish meat from the bones, minimizing meat waste on the bones.
