This Gyuto (Wide Blade Sujihiki) is made from hard, sharp, and wear-resistant Blue #2 high carbon steel. It undergoes three-layer forging and is finished with the highly challenging "Hon-Kasumi" hand sharpening technique. It is truly a rare and exquisite Gyuto.
The "Double-Beveled Kiritsuke Gyuto" can be considered a combination of four types of knives: Santoku, Wa-Gyuto, Sujihiki, and Usuba.
The straight edge of the Kiritsuke blade also functions like an Usuba, allowing it to peel and shred daikon radishes. The sharp tip enables precise and delicate cuts, making it a versatile and convenient knife.
Thanks to the craftsmanship of Sakai artisans, the blade remains tough even when ground extremely thin. Cutting only requires minimal force, preventing the tearing or pressing of ingredients, which preserves the fibers of the food.
