He emphasizes the forging, heat treatment, and quenching are the secrets to creating high-quality pieces. Committed to a path of producing top-notch craftsmanship, he never compromises quality for the sake of low-cost mass production.
The blades crafted by him are manually sharpened and honed with natural whetstones. He believes that natural whetstones are the best choice to showcase the sharpness of carbon steel.
In addition to continuing the legacy of the "Ajikataya" brand for four generations, he has also established a brand under his own namesake.
This particular blade utilizes Shirogami #2 steel as the core steel, sandwiched between stainless steel on both sides. This design addresses the issue of Shirogami #2 steel being prone to rust, combining the sharpness of high-carbon steel with the rust-resistant capability of stainless steel—an excellent fusion of Japanese and Western steel materials.
