JIKKO Tsuchime Finish VG10 Damascus Steel Gyuto
Description
Crafted by JIKKO in Sakai City, Osaka, Japan, the knife combines Sakai's 600 years of forging tradition with the ancient art of Damascus folding. It features a folded Damascus stainless steel, with a corrosion-resistant VG10 core.
The blade is manually hammered to create a beautiful Tsuchime pattern, which aids in food release during cutting. The blade edge is polished with a bright finish, showcasing the exquisite Damascus folding pattern.
In addition to being a favorite among Western chefs, the Gyuto is also highly versatile for Japanese cuisine. It is well-suited for cutting meat, slicing vegetables, handling fish, and even assisting in preparing sashimi.
For home use, a Gyuto with a blade length of 18cm to 21cm is the most suitable choice. Generally, it is advised that Gyuto knives designed exclusively for Western chefs should ideally have a length of around 24cm.
