After meticulous selection, they have chosen a superior secret alloy stainless steel, which undergoes their exclusive oil quenching heat treatment.

The finished knives excel in sharpness, durability, stability, and corrosion resistance, making them truly remarkable products.

All Kogetsu knives feature a "本刃付 (蛤刃)"  (Hamaguriburedo), known for excellent sharpness and penetration. For the handle, the artisans use the finest natural wood—Shitan—adding a touch of elegance to the knife, both functionally and aesthetically.

The meaning of "Mandai (萬代)" conveys the hope that customers will enjoy long-lasting use of this beautiful and stainless blade and its exquisite natural wood handle.
