義弘作 銀三 本霞 鐮型薄刃 朴八角

Description

日本大阪堺巿名門「郷右馬允義弘」之「本霞」系列和包丁,使用安來銀三鋼為芯,夾上極軟鐵施以二枚合鍛打而成,刀面以木砥研磨呈現「地黒刃白」的霞色之感。銀三鋼在硬度、銳利度、耐鏽度皆表現優異, HRC 約 60~62,其鋒利度持久,為不鏽鋼家族之中最銳利的鋼材。

鎌型薄刃的刀刃尖端如同鐮刀的形狀一樣呈現圓弧型。薄刃是一款單邊開刃的刀具,由於片刃加上刀刃筆直的設計,用來為白蘿蔔削皮、切細蘿蔔絲最為合適。刀身刃口角度較薄,因此切割俐落乾淨、切味滑順。也因為刃口較為精緻的緣故,因注意避免使用薄刃切割南瓜等堅硬的瓜果菜蔬以免損害刀刃造成缺口。
