來自日本大阪堺市名家水野鍛鍊所「源昭忠」手鍛古式火造二枚合「名言系列」之銀三鋼「身卸出刃包丁」，刀身上用手工塹切珍貴的銘文「忠誠正氣 雲外蒼天」。

「身卸形出刃」是刀身較窄的出刃包丁，方便處理體型較小的魚類，刀刃的根部較厚，而刀尖則薄而鋒利，可以用來將各種魚類、禽類和獸類順利地分解切割。刃長之下的四分之一可用於剁斬敲打食材或斷筋骨，而上六分之一是屬於薄利之處，主要用於開魚、切割剝離食材的各個部位。同時，片刃的設計使得在分解魚肉時，你可以將平面抵住魚骨，用斜面將魚肉與骨分離，這樣的設計讓更少的魚肉殘留在魚骨上。
