The craftsmanship of ”Settsu no kuni Shoji“ in Kobe, Japan, has been passed down since 1892.

This workshop encompasses various techniques such as forging, grinding, and handle crafting.

Used the technique of dual-layer forging, the great ”curved blade Sakimaru Takohiki“ is ultimately crafted to perfection through meticulous honing to achieve a mirror-polished surface.

Featuring the hardest and sharpest Silver #3 steel as the core steel from the stainless steel family, the rust-resistant Silver #3 steel boasts excellent cutting performance, long-lasting sharpness, and ease of sharpening.

Its good hardness results in relatively simple maintenance. In a busy kitchen, it significantly improves efficiency for the chefs!

The ”鬼反“ or commonly known as the ”curved blade“ style presents a curved spine, enhancing the smoothness of slicing movements with its curved design.

The "rounded tip" (Sakimaru) design makes it easier to cut into ingredients, especially for removing fish skins. Its sharp edge reduces cutting resistance.

In one swift motion, slice through the fish to create perfect slices, without damaging the delicate cells and fibers of the fish meat. This helps to preserve the original flavor and texture of the ingredients!

How to Maintain Stainless Steel Knives

After use, simply wipe the knives dry to remove any moisture. Do not use a dishwasher to clean your knives. If you plan not to use the knives for an extended period, it's advisable to apply a thin layer of protective oil.
