Description

The "Ginsan Nashiji Series" from Goh Umanosuke Yoshihiro in Sakai City, Osaka, is crafted with a Ginsan steel core, wrapped in soft iron on the outer layer, and then forged with three layers by hand.

Ginsan steel excels in hardness, sharpness, and rust resistance, with an HRC of approximately 60-62, making it one of the sharpest materials in the stainless steel family.

The blade features a hand-forged "Nashiji" finish, imparting a rustic and Zen-like quality. Beyond its aesthetic appeal, the Nashiji finish enhances the durability and wear resistance of the knife.

Additionally, it reduces the contact area between the ingredients and the blade, minimizing food adhesion and ensuring a smoother cutting process.

How to Maintain Stainless Steel Knives
