日本大阪堺市「鄉佑馬允義弘」之「銀三梨地系列」以銀紙三號鋼為芯,外側包裹軟鐵再施以本三枚手工鍛打而成,銀三鋼在硬度、銳利度、耐鏽度皆表現優異, HRC 約 60~62,其鋒利度持久,為不鏽鋼家族之中最銳利的鋼材。

刀面以手工鍛造的「梨地」處理,頗有質樸禪意。除了美觀之外,梨地處理能夠增加刀具的耐用性和抗磨損性,同時可以降低食材與刀面的接觸面積,因此能夠減少食材黏附在刀面的情況,也讓切割的過程更加順暢。

握柄:水牛胡桃木八角柄
