Description
The Mioroshi Deba is a narrower variation of the Deba, making it ideal for handling smaller fish. The base of the blade is thick for strength, while the tip is thin and razor-sharp—suitable for filleting and breaking down various types of fish, poultry, and meat. The bottom quarter of the blade can be used for chopping through bones or joints, while the top sixth is thinner and excels at precision work such as filleting and trimming.
Thanks to its single-bevel design, the flat side of the blade can be pressed against fish bones while the beveled side separates the flesh—minimizing meat loss and maximizing efficiency during preparation.
