This product comes with a Magnolia wood Saya.

The renowned "Goh Umanosuke Yoshihiro" from Sakai City, Osaka, is meticulously crafted with a core of Ginsan steel (Silver #3), and hand-finished with traditional Hon-Kasumi to exhibit the delicate hazy and misty effect.

Silver 3 steel excels in hardness, sharpness, and rust resistance, boasting an HRC of approximately 60-62. Its enduring sharpness places it among the sharpest in the stainless steel family.

The name "Yanagiba" is derived from the shape of the blade resembling willow leaves, also known as the "Sashimi knife" or "Sushi knife."

Craftsmen use the length of the blade to skillfully slice down pieces of fish in one stroke. If the blade is moved back and forth during cutting, the texture of sashimi tends to collapse, and the delightful mouthfeel is lost, resulting in a dull appearance of the fish slices.

Therefore, using the length of the Yanagiba to make precise cuts helps retain the freshness and moisture of the fish meat. The blade length should be at least 27cm or preferably 30cm for optimal performance.

How to Maintain Stainless Steel Knives

After use, simply wipe the knives dry to remove any moisture. Do not use a dishwasher to clean your knives. If you plan not to use the knives for an extended period, it's advisable to apply a thin layer of protective oil.

Ensure you use the knives correctly, as they are designed for specific functions such as slicing, chopping, or handling frozen foods. Avoid using them beyond their intended purpose, as this can lead to damage.
