日本大阪堺市「鄉佑馬允義弘」以銀紙三號鋼為芯,施以二枚合手工鍛打而成,刀面以手工仕上研磨呈現出細緻的「地黒刃白」本霞研之效果。銀三鋼在硬度、銳利度、耐鏽度皆表現優異, HRC 約 60~62,其鋒利度持久,為不鏽鋼家族之中最銳利的鋼材。

柳刃刀刃的形狀像柳葉,職人利用刀刃的長度一刀將一片片的魚肉切下。如果在切割時來回移動刀刃,生魚片的質地便會塌陷,魚肉的切面就不會閃閃發光。因此利用柳刃的長度來順利切割可以鎖住魚肉的鮮甜和水份,刃長最少應該要有27cm或30cm以上。
