However, achieving optimal sharpness requires skill and expertise in sharpening. Aogami No.1 steel, produced through specialized steel refining techniques, enhances wear resistance, and its astonishing sharpness is a distinctive feature.
Thanks to the skillful forging by Sakai artisans, even with a finely sharpened blade, the knife maintains its toughness. The cutting process requires minimal force, avoiding tearing or exerting pressure on ingredients that may damage food fibers.
