Crafted by Yamawaki Hamono in Sakai City, Osaka, Japan, this double-beveled, authentic Japanese-style Nakiri is made from 69 layers of folded Damascus stainless steel and a core steel AUS10.

It is an exceptionally versatile essential for both professional and home use. AUS10, with a higher carbon content than traditional stainless steel, undergoes high-hardness heat treatment, allowing the blade to achieve excellent hardness at HRC 62-63. The result is a sharp edge with outstanding toughness and superior edge retention.

The blade undergoes a mirror-polishing treatment, showcasing not only the exquisite Damascus folded pattern but also ensuring a smoother cutting experience during use.

The handle is handcrafted, featuring an octagonal shape that provides a comfortable and secure grip.

How to Maintain Stainless Steel Knives
