The renowned "Goh Umanosuke Yoshihiro" from Sakai City, Osaka, is meticulously crafted with Ginsan (Silver #3 Steel) and forged using the traditional technique of dual cladding, this exceptional knife undergoes final hand-polishing to achieve the Hon-Kasumi finish to exhibit the delicate hazy and misty effect.

Silver 3 steel excels in hardness, sharpness, and rust resistance, boasting an HRC of around 60-62. Its enduring sharpness places it among the sharpest in the stainless steel family.

The rust-resistant Silver #3 steel boasts excellent cutting performance, long-lasting sharpness, and ease of sharpening. Its good hardness results in relatively simple maintenance. In a busy kitchen, it significantly improves efficiency for the chefs!

The blade tip of the sickle-shaped Usuba is curved, similar to the shape of a sickle. The Usuba is a single-beveled blade, and due to its straight design with a sharp edge, it is ideal for peeling and finely slicing radishes.

The blade edge is thin, resulting in clean and smooth cuts, enhancing the slicing experience. However, due to the delicate nature of the blade, caution is advised when using it to cut hard fruits and vegetables like pumpkins, as it may damage the blade and cause nicks.
