The renowned "Goh Umanosuke Yoshihiro" from Sakai City, Osaka, is meticulously crafted with a core of Ginsan steel (Silver #3), forged with the traditional method of three-layered folding, and finally, hand-finished with traditional Hon-Kasumi to exhibit the delicate hazy and misty effect. 

The term 'Hon-Kasumi' in this context refers to the mist-like, hazy finish on the blade's flat surface which is polished by hands.

Ginsan #3 steel excels in hardness, sharpness, and rust resistance, boasting an HRC of approximately 60–62. Its enduring sharpness makes it the sharpest among stainless steel materials.

This Japanese Gyuto features a standard Gyuto shape, and due to its double symmetrical bevel, it is not only favored by Western chefs but is also well-suited as a versatile knife for Japanese cuisine. Ideal for cutting meat, it can also be used for slicing vegetables, handling fish, and even assisting in preparing sashimi.

How to Maintain Stainless Steel Knives
