Description

This Japanese-style petty knife, handcrafted in Sakai City, Osaka by Goh Umanosuke Yoshihiro, is forged from 69-layer folded Damascus stainless steel with a ZA18 core. The blade features a mirror-polished finish, beautifully showcasing the layered Damascus pattern. (Note: ZA18 steel is now discontinued.)

ZA18 steel offers excellent hardness, outstanding sharpness, and is easy to maintain. It allows ingredients to separate effortlessly during cutting, making it a great choice for both home kitchens and professional chefs. The compact size makes the knife easy to carry and particularly suitable for outdoor food preparation.

How to Maintain Stainless Steel Knives
